Instructions
Preheat the oven to 180°C. Grease a 23 cm round cake pan and line the bottom with baking paper.
In a large bowl, whisk together sugar, Greek yogurt, oil, eggs, and vanilla until smooth.
Add flour, cocoa powder, baking powder, instant coffee, and salt. Mix gently until just combined—do not overmix.
Pour the batter into the prepared pan and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
Let the cake cool in the pan for 15 minutes, then transfer it to a wire rack to cool completely.
