Ingredients
2 kg strawberries (washed and cut into medium pieces)
1 kg strawberries (finely chopped or mashed)
1.5 kg sugar
1 tbsp lemon juice
A pinch of citric acid (optional, for preservation)
Instructions
In a large pot, combine the chopped and mashed strawberries with sugar. Mix well.
Cover the mixture and let it rest for at least 1 hour, preferably overnight in the fridge, until the strawberries release their juices.
Place the pot over low heat, stirring occasionally until the mixture starts to boil.
Reduce the heat and let it simmer gently for 25–30 minutes until it thickens. Stir occasionally and remove any foam from the surface.
To test doneness, place a small spoonful on a cold plate. If it sets and spreads like jam, it is ready.
Add lemon juice and a pinch of citric acid, stir well, and let it boil for 1 more minute.
Remove from heat and allow it to cool completely.
Pour into clean, sterilized glass jars and seal tightly.
