Yogurt Basbousa – Classic Middle Eastern Dessert

Yogurt basbousa is a beloved, simple Middle Eastern dessert, known for its delicious taste, light texture, and irresistible aroma. Perfect for serving at gatherings or as a sweet treat with tea or coffee. Here's an easy recipe to make classic yogurt basbousa.

Preparation Time: 60 minutes
Serves: 6 people

Ingredients:

  • Semolina: 2 cups (medium-coarse)

  • Yogurt: 1 cup

  • Sugar: ¾ cup

  • Vegetable oil: ¾ cup

  • Vanilla extract: 1 tsp

  • Baking powder: 1 tsp

  • Salt: a pinch

  • Desiccated coconut: ½ cup

  • Almonds: as needed (halves for decoration)

  • Sugar syrup (Qatar): 1 cup (cold)

Instructions:

  1. Mix dry ingredients: In a large bowl, combine semolina, sugar, coconut, baking powder, and salt.

  2. Add wet ingredients: Stir in yogurt, oil, and vanilla. Mix until all ingredients are combined but avoid overmixing.

  3. Prepare the baking tray: Grease a baking pan with butter or tahini. Pour in the basbousa batter.

  4. Shape and decorate: Cut the batter into equal squares and place an almond half on each piece.

  5. Bake: Preheat the oven to 180°C (356°F). Bake for 25–30 minutes, until the edges and top turn golden brown.

  6. Add syrup: Pour cold sugar syrup over the hot basbousa as soon as it comes out of the oven.

  7. Rest and serve: Let the basbousa absorb the syrup before serving. Serve warm or at room temperature.
