Ingredients:
Semolina: 2 cups (medium-coarse)
Yogurt: 1 cup
Sugar: ¾ cup
Vegetable oil: ¾ cup
Vanilla extract: 1 tsp
Baking powder: 1 tsp
Salt: a pinch
Desiccated coconut: ½ cup
Almonds: as needed (halves for decoration)
Sugar syrup (Qatar): 1 cup (cold)
Instructions:
Mix dry ingredients: In a large bowl, combine semolina, sugar, coconut, baking powder, and salt.
Add wet ingredients: Stir in yogurt, oil, and vanilla. Mix until all ingredients are combined but avoid overmixing.
Prepare the baking tray: Grease a baking pan with butter or tahini. Pour in the basbousa batter.
Shape and decorate: Cut the batter into equal squares and place an almond half on each piece.
Bake: Preheat the oven to 180°C (356°F). Bake for 25–30 minutes, until the edges and top turn golden brown.
Add syrup: Pour cold sugar syrup over the hot basbousa as soon as it comes out of the oven.
Rest and serve: Let the basbousa absorb the syrup before serving. Serve warm or at room temperature.
