Dark chocolate molten cake is one of the most famous international Western desserts. It features a light outer crust with a rich, flowing chocolate center, and is often served warm with vanilla ice cream or a dusting of powdered sugar.
Cooking Time:
60 minutes
Serves:
5 people
Ingredients
200 g dark chocolate
100 g butter
2 eggs
2 egg yolks
½ cup sugar
¼ cup all-purpose flour
1 teaspoon vanilla
A pinch of salt
Butter, as needed (for greasing the molds)
Flour, as needed (for dusting the molds)
Method
Preheat the oven to 200°C.
Grease the molten cake molds with butter, dust with flour, and place them in the refrigerator.
Melt the chocolate and butter together over a double boiler or in the microwave. Stir well and let the mixture cool slightly.
In a bowl, whisk the eggs and egg yolks with the sugar and vanilla until the mixture becomes light in color.
Gently add the melted chocolate mixture to the eggs and mix well.
Sift the flour and salt over the mixture and fold gently until combined, without overmixing.
Pour the batter into the molds, filling them about two-thirds full.
Bake for about 11 minutes, depending on your oven.
Remove the molten cakes from the oven, let them rest for one minute only, then invert onto serving plates.
Serve immediately while hot, allowing the melted chocolate center to flow out.
