Ingredients – Beef and Vegetable Stew

  • Beef: 500 g (or lamb, cut into cubes)

  • Olive oil: 2 tablespoons

  • Onion: 1, chopped

  • Carrots: 2, sliced

  • Potatoes: 2, cubed

  • Zucchini: 1, sliced

  • Garlic: 3 cloves, minced

  • Beef stock: 4 cups

  • Tomato paste: 2 tablespoons

  • Salt: a pinch

  • Black pepper: a pinch

Preparation Method

  1. Heat the olive oil in a deep pot over medium heat. Add the meat and sauté until browned on all sides.

  2. Add the onion and garlic, stirring well until the onion becomes translucent.

  3. Add the carrots, potatoes, and zucchini, and stir for a few minutes.

  4. Pour in the beef stock, add the tomato paste, and season with salt and black pepper.

  5. Reduce the heat, cover the pot, and simmer for about 1 hour until the meat and vegetables are fully cooked and tender.
