Ingredients for Pineapple Fish Tacos:
650 g fish fillets
3 tbsp lemon juice
½ red onion, chopped
1 red bell pepper, thinly sliced
¼ pineapple, cut into small pieces
¾ cup fresh coriander (cilantro)
Tortilla bread, as needed
Salt, to taste
Black pepper, to taste
Instructions:
In a bowl, mix lemon juice, onion, bell pepper, pineapple, and ¼ tsp each of salt and black pepper.
Preheat the grill over medium heat. Sprinkle fish fillets with ¼ tsp each of salt and black pepper and grill until lightly browned, about 3 minutes per side (depending on fish type).
Mix the coriander with the pineapple mixture.
Place the grilled fish into tortillas, pour the pineapple-coriander sauce over the fish, and serve immediately.
