Creamy Garlic Mushroom Soup

Ingredients

  • 6 fresh mushrooms (cleaned and sliced)

  • 1 cup fresh cooking cream

  • 1 ½ cups chicken broth

  • 2 tbsp butter

  • Pinch of salt

  • Pinch of black pepper

  • 1 onion, finely chopped

  • 1 tsp garlic, mashed

  • ½ cup fresh parsley, finely chopped

Preparation

  1. Sauté aromatics: In a non-stick pot, melt the butter over medium heat. Add onion and garlic, and sauté until softened.

  2. Cook the mushrooms: Add sliced mushrooms, season with salt and black pepper, and stir well.

  3. Simmer: Pour in the chicken broth. Let the mixture simmer on low heat for about 20 minutes, then remove from heat.
