Maqroudat is a traditional Levantine sweet pastry, famous for its crispy texture and rich date filling, making it both delicious and nutritious.

Ingredients
For the filling:

200 g dates

2 tbsp melted butter

1 tbsp orange blossom water

½ tsp ground cinnamon

¼ tsp ground nutmeg
For the dough:

2 cups fine semolina

¼ cup flour

⅛ tsp salt

3 tbsp melted butter
-
⅔ cup orange blossom water
For frying and garnish:

2 cups vegetable oil (for frying)

2 cups honey
-
1 tbsp orange blossom water

Powdered sugar (optional, for sprinkling)
Preparation
1. Prepare the dough:

In a large bowl, mix semolina, flour, and salt.

Add the melted butter and rub the mixture with your fingertips until the butter is well incorporated.

Cover the bowl and let it rest for 1 hour.

After resting, add the orange blossom water and knead until you get a soft, pliable dough.
2. Prepare the filling:

In a separate bowl, mix the dates with cinnamon, nutmeg, melted butter, and orange blossom water until the mixture forms a soft, dough-like paste.
3. Assemble:

Roll out the dough into a medium log and flatten it.

Roll the date filling into a smaller log and place it in the center of the dough.

Fold the dough over the filling, sealing it well.

Cut into medium-sized pieces with a knife.

Let the stuffed dough pieces rest for 30 minutes.
4. Frying:

Heat the vegetable oil in a deep pan over medium heat.

Fry the pieces until golden brown.
5. Glaze:

In a saucepan, heat the honey with orange blossom water until it comes to a boil.

Dip the fried pastries into the honey mixture, then remove and place them in a strainer to cool.
6. Serve:

Arrange on a serving plate and, if desired, dust lightly with powdered sugar.
