Authentic Mate Drink

Mate is a traditional hot beverage popular in several South American countries like Argentina, Brazil, and Paraguay. It has also gained popularity in the Levantine cuisine. Made from Yerba Mate leaves, this drink is valued for its health benefits and distinctive flavor. Beyond being a beverage, mate is a social ritual that strengthens bonds among friends and family.

Ingredients

  • 2 tbsp mate leaves (powdered)

  • 100 ml very cold water

  • 500 ml hot water (not boiling)

  • Sugar to taste (optional additions: honey, lemon slices, or orange slices)

Instructions

  1. Place 2 tablespoons of mate powder in a cup.

  2. Add a small amount of very cold water to moisten the leaves.

  3. Insert a metal straw (bombilla) into the cup.

  4. Position the straw at a slight angle and leave it in place to avoid clogging the small holes at its tip with the mate powder.

  5. Slowly pour the hot water onto one side of the cup, keeping the other side dry. Hot water should not be boiling to preserve the flavor of the leaves.

  6. Initially, do not immerse all the powder — only water the part you plan to drink first.

  7. Serve mate immediately after adding the water. Refill with hot water at the same spot to enjoy another round.

  8. Optional: Add sugar or honey to the water before pouring, or include lemon or orange slices for a refreshing citrus flavor.
