Grilled Chicken with Cilantro and Lemon (Diet-Friendly Recipe)



Grilled chicken is one of the best light and healthy dishes for a weight-loss diet. This recipe combines tender chicken breasts with the refreshing taste of lemon and the rich aroma of fresh cilantro.

Ingredients

  • Chicken breasts: 8 (boneless, skinless)

  • Fresh cilantro: 1 bunch

  • Lemon zest: from 1 lemon

  • Lemon juice: from 2 lemons

  • Garlic: 3 cloves, minced

  • Ground coriander: 1 tsp

  • Salt: 1 tsp

  • Black pepper: 1 tsp

  • Olive oil: 2 tbsp

Preparation Method

  1. In a blender, combine fresh cilantro, lemon zest, lemon juice, minced garlic, ground coriander, salt, black pepper, and olive oil. Blend until smooth.

  2. Place the chicken breasts in a large resealable plastic bag. Pour the marinade over the chicken.

  3. Press out excess air, seal the bag, and gently massage the marinade into the chicken until well coated. Refrigerate overnight for best flavor.

  4. Preheat and lightly oil the grill over medium heat.

  5. Grill the chicken breasts for about 5 minutes per side, or until fully cooked.

  6. Transfer to a serving plate and serve hot.
