Za’atar and Cheese Bread for Sandwiches

Ingredients

  • Warm water: 2 cups

  • Powdered milk: ¾ cup

  • Sugar: 2 tbsp

  • Instant yeast: 2 tbsp

  • Olive oil: ½ cup

  • Flour: 5 cups

  • Salt: 1 tsp

  • Fresh za’atar leaves: 2 cups, chopped

  • White cheese: as needed

Preparation Method

  1. In a deep bowl, combine water, powdered milk, sugar, yeast, and olive oil. Mix well.

  2. Cover the bowl and let it sit for about 15 minutes until the yeast becomes active.

  3. Gradually add salt and flour while kneading well by hand.

  4. Add chopped za’atar and continue kneading until the dough is smooth and well combined.

  5. Cover the dough and let it rise for 60 minutes until it doubles in size.

  6. Knead the dough again to remove air bubbles.

  7. Divide the dough into medium-sized balls, cover, and let them rest for 10 more minutes.

  8. Roll out each dough ball into a circle, place about 1 tablespoon of white cheese in the center, and close it to form a ball. Repeat for all dough balls.

  9. Place the stuffed dough balls on a baking tray lined with parchment paper and let them rest for 30 minutes.

  10. Brush the tops with a little olive oil and gently flatten them into bread shapes.

  11. Preheat the oven to 180°C (356°F).

  12. Bake until golden and fully cooked, then serve warm.
