Easy Baked Potatoes – Light & Perfect for Diets

📝 Ingredients:

  • 4 potatoes (cut into thick slices or scored with shallow cuts)

  • 2 tablespoons lemon juice

  • 1 tablespoon olive oil

  • 1 teaspoon rosemary

  • ½ teaspoon thyme

  • Salt, to taste

👩‍🍳 Instructions:

  1. Preheat the oven to 220°C (428°F).

  2. Blanch the potatoes:
    Bring a large pot of water to a boil over medium heat, then turn off the heat.
    Add the potato slices to the hot water, season with salt, and soak for 2 minutes.
    Drain the potatoes and transfer them to a bowl.

  3. Prepare the marinade:
    In a separate bowl, mix the lemon juice, olive oil, rosemary, thyme, and salt.

  4. Coat the potatoes:
    Pour the marinade over the potato slices and toss until well coated.

  5. Bake:
    Arrange the seasoned potato slices in a single layer on a baking tray.
    Bake on the middle rack of the oven for 25 minutes, or until golden and cooked through.
