French Onion Soup with Yellow Cheese

French onion soup is an easy and popular recipe in French cuisine, made with plenty of onions. It’s nutritious and delicious. To serve it the traditional French way, place a small toasted bread slice or some toasted bread cubes on top of each bowl of soup.

Serves: 2 people

Ingredients

  • 400 grams onions (sliced)

  • 2 tablespoons olive oil

  • 1 tablespoon flour

  • 2 bay leaves

  • 1 teaspoon black pepper

  • 2 cups chicken broth

  • ½ cup yellow cheese (grated)

  • 1 loaf bread (wheat, toasted and cut)

  • 2 green onions (chopped)

  • ½ teaspoon salt

  • ¼ teaspoon cumin

Preparation

  1. Pour 1 cup of chicken broth into a pot over low heat. Add onions, salt, black pepper, cumin, and olive oil. Cook until the onions caramelize.

  2. Add the flour and stir continuously, then add the remaining cup of broth and bay leaves. Stir until the mixture thickens.

  3. Increase the heat until the soup boils, then reduce the heat and simmer for 25 minutes.

  4. Pour the soup into serving bowls and garnish with grated cheese and toasted bread.
