Lebanese Nights Dessert with Semolina



Lebanese Nights (Layali Lubnan) is one of the most famous Lebanese desserts served at Arab hospitality tables. It's prepared for various occasions and during the holy month of Ramadan. Try this simple and easy recipe for one of the most delicious Arab sweets. Here's how to make it.

Serves: 6 people
Ingredients:

For garnishing:

Syrup (as needed)
½ cup ground pistachios

For the dessert:

1 liter milk (liquid)
¾ cup fine semolina
1 teaspoon rose water
1 teaspoon orange blossom water
2 pieces of mastic (ground)
3 tablespoons sugar
1 cup ready-made clotted cream (qeshta)
Instructions:
In a pot over low heat, combine the milk, sugar, and semolina. Stir the ingredients well until they are fully mixed.
Let the mixture simmer on the stove until it begins to boil, then add the rose water, orange blossom water, and ground mastic.
Stir well again to ensure everything is well combined.
Remove the pot from the heat and pour the semolina mixture into a serving dish. Set it aside to cool completely.
Once cooled, spread the clotted cream evenly over the semolina layer.
Garnish the Lebanese Nights dessert with ground pistachios and syrup on top. Serve it chilled.
