🌽 Main Ingredients:

  • 5 cups fresh corn kernels

  • 2 tbsp butter

  • 2 cloves garlic (minced)

  • ½ tsp salt

  • ½ tsp black pepper

  • ¼ cup mayonnaise

  • ¼ cup sour cream

  • ½ cup finely grated Parmesan cheese

  • 1 tbsp jalapeño (optional)

  • 1 cup chopped fresh coriander

  • 1 cup green onions (chopped)

  • 1 red onion (finely chopped)

  • 3 tbsp lime juice (or to taste)

👩‍🍳 Method

  1. Cut the corn kernels off the cob.

  2. Heat butter in a large pan over high heat. Add garlic and stir for about 10 seconds.

  3. Add corn and cook for about 5 minutes, stirring occasionally until lightly golden and slightly charred.

  4. Season with salt and black pepper during cooking.

  5. Transfer the corn to a large bowl.

  6. Add mayonnaise, sour cream, lime juice, and Parmesan cheese, then mix well.

  7. Add coriander, red onion, green onion, and jalapeño. Mix again until fully combined.

  8. Serve in a dish and garnish with extra cheese, spices, or lime slices if desired.
