2 teaspoons baking powder
¾ teaspoon baking soda
1½ cups unsalted butter (room temperature)
2 cups sugar
3 eggs
2 egg whites (room temperature)
1 tablespoon vanilla extract
1½ cups buttermilk (room temperature)
Instructions
Preheat the oven to 180°C (350°F). Grease three 9-inch cake pans, line the bottoms with parchment paper, and grease again.
Make sure all ingredients are at room temperature for best results.
In a bowl, mix flour, salt, baking powder, and baking soda. Set aside.
In another bowl, beat the butter and sugar with an electric mixer until light and creamy.
Add the eggs, egg whites, and vanilla. Mix well until fully combined.
Gradually add the dry ingredients while mixing on low speed.
Add the buttermilk and mix until the batter is smooth and slightly thick.
Divide the batter evenly between the pans and bake for about 25 minutes or until fully cooked.
Let the cakes cool completely in the pans before removing them.
Prepare the Cream:
Beat the butter until smooth and creamy.
Gradually add powdered sugar, milk, vanilla, and salt while mixing.
Increase the speed and beat for about 2 minutes until light and fluffy.
Adjust consistency by adding more powdered sugar (to thicken) or milk (to soften).
Assembly:
Level the cake layers by trimming the tops if needed.
Place the first layer and spread a portion of the cream evenly.
Add the second layer and repeat. Then place the third layer.
Cover the entire cake with cream on the top and sides.
Refrigerate for at least one hour before serving to allow it to set.
