Simple Oat Soup Recipe

A light, healthy, and comforting appetizer, simple oat soup is rich in fiber and plant-based protein. It’s perfect for lunch or dinner and helps keep you feeling full for longer.

Ingredients

  • ½ cup oats

  • 1 medium carrot (cut into small cubes)

  • 1 small zucchini (cut into cubes)

  • 1 small onion (finely chopped)

  • 1 clove garlic (minced)

  • 1 teaspoon olive oil

  • 3 cups water

  • ½ tablespoon salt

  • ½ tablespoon black pepper

  • ¼ teaspoon fresh grated ginger

  • A sprinkle of chopped parsley

Instructions

  1. Heat the olive oil in a pot over medium heat. Add the chopped onion, garlic, and ginger, and sauté until softened.

  2. Add the carrot, zucchini, and oats, and stir for about a minute.

  3. Pour in the water, then season with salt and black pepper.

  4. Let the soup simmer on low heat for 10–12 minutes until the oats and vegetables are cooked and the texture becomes slightly thick.

  5. Serve hot, garnished with fresh herbs like chopped parsley.

Tip

For a creamier texture, you can blend part of the soup before serving.
