1 cup oats
1/2 cup cottage cheese
2 eggs
1/8 teaspoon salt
- Maple syrup (as desired)or jam / berries / mixed fresh fruit for serving
👩🍳 Instructions
Place the oats, cottage cheese, eggs, and salt in a blender.
Blend on high speed for about 30 seconds until the mixture becomes smooth and well combined.
Heat a large non-stick pan over medium heat.
Pour about 2 tablespoons of batter for each pancake, leaving space between them.
- Cook for 2–3 minutes until the edges set and the bottom turns golden brown.(Note: these pancakes do not form bubbles like traditional pancakes.)
Flip gently using a thin spatula and cook the other side for 1–2 minutes until golden.
Transfer to a serving plate and repeat with the remaining batter.
Serve warm with your preferred toppings.
