Cottage Cheese Oat Pancakes (Healthy Breakfast Recipe)

A delicious and healthy breakfast option that provides a rich source of protein and fiber. These pancakes are light, nutritious, and can be served with maple syrup, honey, jam, or fresh fruits.

🥣 Ingredients

  • 1 cup oats

  • 1/2 cup cottage cheese

  • 2 eggs

  • 1/8 teaspoon salt

  • Maple syrup (as desired)
    or jam / berries / mixed fresh fruit for serving

👩‍🍳 Instructions

  1. Place the oats, cottage cheese, eggs, and salt in a blender.

  2. Blend on high speed for about 30 seconds until the mixture becomes smooth and well combined.

  3. Heat a large non-stick pan over medium heat.

  4. Pour about 2 tablespoons of batter for each pancake, leaving space between them.

  5. Cook for 2–3 minutes until the edges set and the bottom turns golden brown.
    (Note: these pancakes do not form bubbles like traditional pancakes.)

  6. Flip gently using a thin spatula and cook the other side for 1–2 minutes until golden.

  7. Transfer to a serving plate and repeat with the remaining batter.

  8. Serve warm with your preferred toppings.
