For the cake:
2 ½ cups flour
⅓ cup cornstarch
½ tsp baking soda
1 tsp baking powder
½ tsp salt
4 tbsp instant coffee
½ cup butter (softened)
½ cup vegetable oil
1 ½ cups brown sugar
3 eggs
1 tbsp vanilla extract
1 tsp white vinegar
1 ½ cups buttermilk
For the creamy frosting:
1 cup white chocolate
3 cups whipping cream
1 ½ tbsp instant coffee
For decoration:
Chopped nuts (as desired)
Preparation Method
Preheat the oven to 160°C and prepare two cake pans.
In a bowl, mix flour, cornstarch, baking powder, baking soda, salt, and instant coffee.
In a separate bowl, beat butter with oil and brown sugar until creamy.
Add eggs one at a time while mixing, then add vanilla, vinegar, and half of the buttermilk.
Gradually add the dry ingredients, alternating with the remaining buttermilk, mixing gently until smooth.
Divide the batter into the prepared pans and bake for about 30 minutes, or until fully cooked.
Allow the cakes to cool completely before decorating.
To prepare the frosting, heat the whipping cream until it begins to gently simmer, then pour it over the white chocolate and add instant coffee.
Let it sit briefly, then stir until smooth. Chill in the refrigerator until cool, then whip until creamy and fluffy.
Assemble the cake by spreading a layer of frosting over the first cake layer, then place the second layer on top and cover the entire cake with frosting.
Decorate with chopped nuts and serve.
