Walnut-Filled “Klej” Pastry (Eastern Ramadan Dessert)

Klej (كلاج) is a traditional Eastern dessert known for its thin, crispy layers. It can be filled with cheese, walnuts, or cream to suit all tastes and is often served at special occasions alongside coffee or tea. Here’s an easy recipe for walnut-filled klej using ingredients commonly found in your kitchen.

Ingredients

  • Klej dough: 1 pack (phyllo sheets / “Gulash”)

  • Walnuts: 1 cup, coarsely chopped

  • Sugar: ½ cup

  • Cinnamon: ½ tsp

  • Butter: ¾ cup, melted

  • Syrup (Qater): as needed, ready and cold

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. In a bowl, mix the walnuts, sugar, and cinnamon, then set aside.

  3. Unroll the phyllo sheets and brush each sheet lightly with melted butter.

  4. Place a portion of the walnut mixture on one end of each sheet, then roll it into a cylinder.

  5. Repeat until all the sheets and filling are used.

  6. Arrange the rolls in a greased baking tray and brush the tops with the remaining butter.

  7. Bake for 25–30 minutes until the klej turns golden and crispy.

  8. Remove from the oven and immediately pour the cold syrup over the rolls.

  9. Serve warm alongside coffee or tea.
