For the chicken marinade
4 tablespoons olive oil
½ teaspoon turmeric
½ teaspoon paprika
½ teaspoon black pepper
½ teaspoon salt
Main ingredients
2 whole chickens
2 cups basmati rice
2 tablespoons oil
2 tablespoons ghee
Cardamom (to taste)
Dried lime (loomi) (to taste)
Cloves (to taste)
Bay leaves (to taste)
Salt (to taste)
3 cups hot water
1 piece charcoal (for smoking)
Preparation Method
Wash the chicken well and make small cuts in it.
Marinate it with olive oil, turmeric, paprika, black pepper, and salt.
Place the chicken in the oven at 180°C (350°F) and bake for about 60 minutes until fully cooked and golden.
Preparing the Rice
Wash the basmati rice, soak it for a short time, then drain it.
In a pot, heat the oil and ghee, then add cardamom, dried lime, cloves, bay leaves, and salt.
Pour in the hot water and bring it to a boil.
Add the rice and let it boil for about 5 minutes, then reduce the heat and cook for 20 minutes until the rice is done.
Final Step (Smoking for Flavor)
Place the cooked chicken on top of the rice in the pot.
Put a small piece of hot charcoal on a piece of aluminum foil, add a drop of oil, and place it inside the pot.
Cover the pot tightly for 5 minutes so the rice and chicken absorb the smoky flavor.
Serve the Chicken Mathbi hot with rice and enjoy this delicious traditional Ramadan dish.
