This diet-friendly pasta is a light and healthy option, made with a simple tomato-based sauce instead of cream. It’s perfect for a balanced meal, offering natural flavors with fewer calories and less fat.

Ingredients

  • 250 g pasta (whole wheat or regular)

  • 1 small onion (finely chopped)

  • 2 garlic cloves (minced)

  • 2 tomatoes (grated or blended)

  • ½ colored bell pepper (sliced, optional)

  • 2 tablespoons olive oil

  • Salt to taste

  • ½ teaspoon black pepper

  • ½ teaspoon oregano (or dried basil)

  • ½ cup pasta cooking water

  • Fresh parsley (chopped, for garnish)

Instructions

  1. Cook the pasta in salted boiling water according to package instructions. Drain and reserve ½ cup of the cooking water.

  2. In a pan over medium heat, heat the olive oil. Add the onion and sauté until soft, then add the garlic and cook for about a minute.

  3. Add the tomatoes and bell pepper, and cook until the sauce thickens slightly.

  4. Use a hand blender to blend the sauce until smooth and creamy.

  5. Season with salt, black pepper, and herbs. Add the cooked pasta and mix well. Gradually add some reserved pasta water if you prefer a lighter sauce.

  6. Serve hot and garnish with fresh parsley.

You can add grilled chicken or steamed vegetables to make it a more filling and nutritious meal.
