250 g pasta (whole wheat or regular)
1 small onion (finely chopped)
2 garlic cloves (minced)
2 tomatoes (grated or blended)
½ colored bell pepper (sliced, optional)
2 tablespoons olive oil
Salt to taste
½ teaspoon black pepper
½ teaspoon oregano (or dried basil)
½ cup pasta cooking water
Fresh parsley (chopped, for garnish)
Instructions
Cook the pasta in salted boiling water according to package instructions. Drain and reserve ½ cup of the cooking water.
In a pan over medium heat, heat the olive oil. Add the onion and sauté until soft, then add the garlic and cook for about a minute.
Add the tomatoes and bell pepper, and cook until the sauce thickens slightly.
Use a hand blender to blend the sauce until smooth and creamy.
Season with salt, black pepper, and herbs. Add the cooked pasta and mix well. Gradually add some reserved pasta water if you prefer a lighter sauce.
Serve hot and garnish with fresh parsley.
