🧾 Ingredients for Dried Cowpeas in Tomato Sauce
Dried cowpeas: 1 cup
Onion: 1 medium, chopped
Garlic: 2 cloves, minced
Tomatoes: 2 medium, chopped
Tomato paste: 1 tablespoon
Oil: 3 tablespoons
Salt: to taste
Black pepper: ½ teaspoon
Cumin: ½ teaspoon
Water: 4 cups
Parsley: optional, chopped for garnish
👩🍳 Preparation Method
Soak the dried cowpeas in water for 6–8 hours or overnight to soften them and reduce cooking time.
Boil the soaked cowpeas in fresh water until they are almost tender, then drain and rinse them well.
In a pot, heat the oil and sauté the onion and garlic until golden.
Add chopped tomatoes and tomato paste, and stir for 3–4 minutes until the sauce thickens.
Add the pre-cooked cowpeas along with salt, black pepper, and cumin. Stir well to combine.
Pour in water, cover the pot, and let it simmer over medium heat until the cowpeas are fully cooked and soft.
Serve hot with rice or bread, garnished with fresh parsley if desired.
