Preparation Method

Place the lupini in a bowl and cover with water. Let them sit for 2 hours.
Drain the water, transfer the beans to a pot, and add fresh water.
Cook over medium heat for 20 minutes.
Turn off the heat, cover the pot, and let the lupini cool inside for 4 hours.
Drain the cooking water, then rinse the lupini thoroughly several times to remove any remaining bitterness.
Transfer the lupini to a jar and cover with room-temperature water. Add salt as desired.
