Ingredients
1 cup whole wheat flour (or ground oats)
1 teaspoon baking powder
1 teaspoon ground cinnamon
A pinch of salt
½ cup raisins (soaked in warm water for 10 minutes)
2 large eggs
½ cup honey
½ cup low-fat yogurt
¼ cup coconut oil
1 teaspoon vanilla extract
Preparation Method
Preheat the oven to 180°C (350°F).
Grease a small cake pan lightly with oil and line it with parchment paper.
In a bowl, mix the flour, baking powder, cinnamon, and salt.
In another bowl, beat the eggs with honey using an electric mixer. Add the yogurt, coconut oil, and vanilla, and mix well until combined.
Gradually add the dry ingredients to the wet mixture, stirring until you obtain a smooth, well-combined batter.
Gently fold in the soaked raisins.
Pour the batter into the prepared pan and bake for about 30 minutes, or until a toothpick inserted in the center comes out clean.
Allow the cake to cool slightly before slicing and serving.
Healthy Tip
