Ready-made samosa pastry sheets (as needed)
2 potatoes, boiled and roughly mashed
½ cup peas
1 carrot, grated
1 green pepper, finely chopped (optional)
1 onion, finely chopped
2 tablespoons olive oil
1 teaspoon curry powder
½ teaspoon cumin
½ teaspoon turmeric
½ teaspoon salt
Vegetable oil, for deep frying
Instructions
Heat the olive oil in a pan over medium heat and sauté the onion until softened.
Add the potatoes, peas, carrot, and green pepper.
Season with turmeric, cumin, curry powder, and salt, then stir well until the vegetables are tender and well combined.
Remove from heat and let the filling cool slightly.
Fill the samosa pastry sheets with the vegetable mixture and seal tightly.
Heat vegetable oil in a deep pan and fry the samosas until golden brown and crispy.
Remove and place on paper towels to absorb excess oil.
Serve warm with your favorite dipping sauces.
