3 cups all-purpose flour
2 teaspoons yeast
1 teaspoon sugar
1 teaspoon salt
2 tablespoons yogurt
2 tablespoons olive oil
1 cup milk
1 egg yolk (beaten and mixed with 1 teaspoon instant coffee)
Sesame seeds, to taste
Nigella seeds (black seed), to taste
Method
Warm the milk and yogurt in a saucepan until lukewarm, then add the yeast and sugar and mix well.
Cover the pan and let the mixture rest until the yeast activates.
In a bowl, sift the flour and salt, add the olive oil, then pour in the milk mixture.
Knead until a cohesive dough forms. Add more flour if the dough feels too sticky.
Lightly grease the dough with olive oil, cover it, and let it rise for 60 minutes.
Divide the dough into equal balls.
Flatten each ball into a round shape on a greased baking tray. Using a knife, make a circle in the center and cut it into small squares without cutting all the way through the dough.
Repeat with the remaining dough, cover, and let rest for another 15 minutes.
Brush the surface with the beaten egg yolk mixed with instant coffee, then sprinkle with sesame and nigella seeds.
Bake on the middle rack of a preheated oven at 200°C (390°F), placing a tray of water on the lower rack.
Bake until the bread is fully cooked and golden in color.
