Ingredients

For the Freekeh:

  • Freekeh: 2 cups (washed and soaked for 10 minutes)

  • Ghee: 2 tablespoons

  • Onion: 1 medium (finely chopped)

  • Salt: to taste

  • Black pepper: a pinch

  • Mixed spices: 1 teaspoon

  • Cinnamon: a pinch (optional)

  • Meat broth: 3 cups

For the Meat:

  • Lamb or veal: 500 g (cut into cubes)

  • Onion: 1 medium (quartered)

  • Bay leaf: 1

  • Cinnamon stick: 1

  • Cardamom pods: 4

  • Salt: a pinch

  • Black pepper: a pinch

  • Water: as needed

Preparation Method

  1. Place the meat in a pot, cover with water, and add the onion, cardamom, cinnamon stick, bay leaf, salt, and black pepper.

  2. Bring to a boil, remove any foam, then reduce heat and simmer for 50–60 minutes until tender.

  3. Remove the meat and reserve the broth.

  4. In a wide pot, heat the ghee and sauté the chopped onion until soft.

  5. Add the drained freekeh and stir for 2 minutes until lightly toasted.

  6. Season with salt, black pepper, mixed spices, and cinnamon.

  7. Pour in 3 cups of hot meat broth, bring to a boil, then reduce heat, cover, and simmer for 25–30 minutes until cooked and liquid is absorbed.

  8. Add the cooked meat pieces and gently mix.

  9. Serve hot, accompanied by yogurt or a fresh green salad.
