For the Freekeh:
Freekeh: 2 cups (washed and soaked for 10 minutes)
Ghee: 2 tablespoons
Onion: 1 medium (finely chopped)
Salt: to taste
Black pepper: a pinch
Mixed spices: 1 teaspoon
Cinnamon: a pinch (optional)
Meat broth: 3 cups
For the Meat:
Lamb or veal: 500 g (cut into cubes)
Onion: 1 medium (quartered)
Bay leaf: 1
Cinnamon stick: 1
Cardamom pods: 4
Salt: a pinch
Black pepper: a pinch
Water: as needed
Preparation Method
Place the meat in a pot, cover with water, and add the onion, cardamom, cinnamon stick, bay leaf, salt, and black pepper.
Bring to a boil, remove any foam, then reduce heat and simmer for 50–60 minutes until tender.
Remove the meat and reserve the broth.
In a wide pot, heat the ghee and sauté the chopped onion until soft.
Add the drained freekeh and stir for 2 minutes until lightly toasted.
Season with salt, black pepper, mixed spices, and cinnamon.
Pour in 3 cups of hot meat broth, bring to a boil, then reduce heat, cover, and simmer for 25–30 minutes until cooked and liquid is absorbed.
Add the cooked meat pieces and gently mix.
Serve hot, accompanied by yogurt or a fresh green salad.
