Eggplant: 5 pieces, peeled and cut into thick slices

Ground beef: 500 g

Vegetable oil: 4 tablespoons

Onion: 1 chopped

Garlic: 2 cloves, minced

Red pepper paste: ¾ cup

Tomatoes: 2 chopped

Green pepper: 3 pieces

Water: 2½ cups
How to Prepare Grilled Eggplant Moussaka with Ground Beef

Preheat the oven to 180°C.

Place the eggplant slices on a baking tray, brush them with oil, then sprinkle half the salt and black pepper.

Bake the eggplant for 25 minutes.

In a pan, sauté the onion and garlic in a little oil until softened.

Add the ground beef and cook it with the onion and garlic for a few minutes.

Add the red pepper paste, chopped tomatoes, and green peppers.

Pour in the water, then add the remaining salt and black pepper.

Stir the mixture well and let it cook for 5 more minutes.

Spread the beef-and-sauce mixture over the baked eggplant in the tray, then return it to the oven for 20 minutes, until the moussaka is fully cooked.

Serve the moussaka hot with vermicelli rice.
