1 cup all-purpose flour
1 cup fine semolina
¼ cup vegetable oil
1 tablespoon sugar
1 teaspoon instant yeast
1 teaspoon baking powder
½ teaspoon cinnamon
¼ teaspoon mahleb
¼ teaspoon salt
½ cup warm water (for kneading)
2 cups sugar syrup (cold)
Vegetable oil, for deep frying
How to Prepare Crispy Zainab Fingers
In a deep bowl, combine the flour, semolina, sugar, salt, cinnamon, instant yeast, baking powder, and mahleb.
Add the vegetable oil and rub it into the dry ingredients until fully absorbed.
Gradually add the warm water while kneading until a soft, cohesive dough forms.
Cover the dough and let it rest for about 20 minutes.
Take a small piece of dough and shape it into a finger. Roll it gently over a grater to create the traditional ridged shape.
Repeat with the remaining dough.
Heat plenty of oil in a deep pan over medium heat. Fry the Zainab Fingers until golden and crispy.
Remove them from the oil and immediately dip them into the cold sugar syrup for about one minute.
Drain well, place on a serving dish, and serve.
