Ingredients

For the pizza dough:

  • 6 tablespoons hot water

  • ½ teaspoon instant yeast

  • 1 cup all-purpose flour

  • ½ teaspoon sugar

  • ½ teaspoon salt

  • ¾ tablespoon olive oil

For the pizza sauce:

  • 1 cup mashed tomatoes

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

For the topping:

  • ¼ cup shredded mozzarella cheese

  • ¼ cup shredded cheddar cheese

  • 10 slices beef pepperoni

  • 1 teaspoon olive oil

Preparation

1. Prepare the dough

  1. In a small bowl, mix hot water and yeast, and let it sit for 1 minute at room temperature until it activates.

  2. In a separate bowl, combine flour, sugar, salt, and olive oil. Add the yeast mixture and mix until a soft dough forms.

  3. Sprinkle a little flour on your work surface and knead the dough gently by hand. Return it to the bowl, cover with a clean kitchen towel, and let it rest for 5 minutes, or until it doubles in size.

2. Make the pizza sauce

  1. Heat olive oil in a saucepan over medium heat.

  2. Add garlic and sauté until fragrant.

  3. Add the mashed tomatoes and stir occasionally for about 15 minutes, until the sauce thickens.

  4. Remove from heat and set aside.

3. Cook the pizza

  1. Brush a non-stick skillet with a teaspoon of olive oil.

  2. Place the dough in the skillet and press it out evenly to cover the bottom.

  3. Cook over medium heat for 2 minutes, or until the bottom becomes golden and crisp.

  4. Flip the dough carefully, then spread the pizza sauce on top.

  5. Sprinkle with mozzarella, cheddar, and pepperoni slices.

  6. Reduce the heat to low, cover the skillet, and cook for a few minutes until the cheese melts completely.

4. Serve

Remove the pan from heat, slice your skillet pizza, and serve hot — right from the pan!
