Oat Pancakes with Vegetables and Cheese (Diet-Friendly)

Ingredients

  • Oats: 1 cup

  • Flour: ½ cup

  • Feta cheese: ½ cup

  • Cheddar cheese: ¼ cup

  • Baking powder: 1 tsp

  • Salt: a pinch

  • Thyme: a pinch

  • Eggs: 2

  • Milk: ½ cup

  • Olive oil: 2 tbsp

  • Onion: 1 (chopped)

  • Tomato: ½ (chopped)

  • Bell pepper: ½ (chopped)

  • Carrot: 1 (grated)

  • Green onion: 2 stalks (chopped)

Instructions

  1. In a bowl, mix oats, flour, baking powder, salt, and thyme until well combined.

  2. In a separate deep bowl, whisk eggs, milk, and olive oil using an electric whisk.

  3. Add the oat-flour mixture to the egg-milk mixture, then stir in onion, tomato, carrot, bell pepper, and green onion. Mix well.

  4. Add feta and cheddar cheese and mix again until you get a slightly runny batter.

  5. Grease a non-stick pan with olive oil and heat over medium heat.

  6. Pour ¼ cup of batter into the pan and cook for about 2 minutes on each side until golden and cooked through. Repeat with the remaining batter.

  7. Serve the oat pancakes with vegetables and cheese hot on a serving plate.
