Italian Spinach Quiche

Spinach is a leafy green full of valuable nutrients and health benefits. It can be prepared in many delicious dishes, one of which is the Italian-style spinach quiche. Try this recipe and enjoy a flavorful, wholesome meal alongside a cup of tea.

Ingredients

For the crust:

  • Flour: 300 g

  • Cold butter: 150 g

  • Salt: ¾ teaspoon

  • Egg: 1

  • Milk: 1 tablespoon

For the filling:

  • Onion: 1 medium (sliced)

  • Garlic: 1 teaspoon (minced)

  • Spinach: 500 g (chopped)

  • Vegetable oil: 1 tablespoon

  • Butter: 1 tablespoon

  • Salt: a pinch

  • Black pepper: ¼ teaspoon

  • Oregano: ½ teaspoon

  • Feta cheese: ½ block (crumbled)

  • Eggs: 3

  • Cooking cream: ¾ cup

  • Mozzarella cheese: 2 cups (shredded)

Method

Prepare the crust:

  1. In a bowl, mix the flour and salt. Add the cold butter and rub until the mixture resembles coarse crumbs.

  2. Add the egg and milk, mixing with an electric mixer until a smooth dough forms.

  3. Cover and chill the dough in the fridge for about 30 minutes.

Prepare the filling:

  1. Heat the oil and butter in a skillet over medium heat. Add the onion and sauté until softened.

  2. Stir in the garlic, then add the spinach, cooking until wilted. Season with salt and pepper.

  3. Remove from the heat and mix in the crumbled feta cheese.

Assemble the quiche:

  1. Grease a quiche pan with butter.

  2. Roll out the chilled dough with a rolling pin, then transfer to the pan, trimming any excess dough around the edges. Prick the base with a fork.

  3. Spread the spinach mixture evenly over the crust.

  4. In a separate bowl, whisk together the eggs, cream, and a pinch of salt and pepper. Stir in 1 cup of mozzarella.

  5. Pour this mixture over the spinach filling, then sprinkle the remaining mozzarella on top.

  6. Preheat the oven to 180°C (350°F).

  7. Bake for 40 minutes, until the quiche is set and golden.
