Ingredients
For the crust:

For the filling:

Onion: 1 medium (sliced)

Garlic: 1 teaspoon (minced)

Spinach: 500 g (chopped)

Vegetable oil: 1 tablespoon

Butter: 1 tablespoon

Salt: a pinch

Black pepper: ¼ teaspoon

Oregano: ½ teaspoon

Feta cheese: ½ block (crumbled)

Eggs: 3

Cooking cream: ¾ cup

Mozzarella cheese: 2 cups (shredded)
Method
Prepare the crust:

In a bowl, mix the flour and salt. Add the cold butter and rub until the mixture resembles coarse crumbs.

Add the egg and milk, mixing with an electric mixer until a smooth dough forms.

Cover and chill the dough in the fridge for about 30 minutes.
Prepare the filling:

Heat the oil and butter in a skillet over medium heat. Add the onion and sauté until softened.

Stir in the garlic, then add the spinach, cooking until wilted. Season with salt and pepper.

Remove from the heat and mix in the crumbled feta cheese.
Assemble the quiche:

Grease a quiche pan with butter.

Roll out the chilled dough with a rolling pin, then transfer to the pan, trimming any excess dough around the edges. Prick the base with a fork.
