Sudanese Menin (Traditional Sweet Pastry)

Menin is one of the most delicious and simple traditional sweet pastries. What makes it special is its versatility—you can prepare it in different ways to suit all tastes. It can be stuffed with dates or Turkish delight (malban), or left plain without any filling, making it also suitable for vegetarians.

Ingredients

  • 7 cups flour

  • 1 tbsp baking powder

  • 1 tbsp yeast

  • ¼ tsp salt

  • 2 tbsp powdered milk

  • 1 tbsp sesame seeds (toasted)

  • 1 ½ tbsp cumin

  • 1 ½ cups sugar

  • 1 ½ cups vegetable oil

  • 1 ½ cups milk

  • 2 packets powdered cream

  • 1 tbsp baking soda

Method of Preparation

  1. Prepare the dry mixture

    • Place flour, baking powder, powdered milk, yeast, cumin, sesame seeds, and salt in a blender or mixing bowl.

  2. Prepare the wet mixture

    • In a separate bowl, add vegetable oil, sugar, powdered cream, and baking soda.

    • Beat well, then gradually add the milk until the mixture becomes creamy.

  3. Form the dough

    • Gradually add the wet mixture into the dry ingredients.

    • Mix well until you form a cohesive dough.

    • Cover the dough and let it rest for 20 minutes.

  4. Shape the menin

    • Roll out the dough with a rolling pin.

    • Cut it into rectangular or square pieces.

    • Arrange them on a baking tray greased with vegetable oil.

  5. Bake

    • Place the tray in a preheated oven at 180°C for 30 minutes, or until golden.

  6. Serve

    • Let the menin cool before serving.
