Chicken and Vegetable Béchamel Pasta

Ingredients

  • 2 chicken breasts (cut into cubes)

  • 1 cup mushrooms (sliced)

  • 1 ½ cups pasta (boiled and drained)

  • 3 ½ cups milk

  • A pinch of salt

  • A pinch of black pepper (ground)

  • 2 tablespoons butter

  • 6 tablespoons flour

  • 1 onion (chopped)

  • 1 large carrot (cut into cubes)

  • 1 cup broccoli florets (small pieces)

  • ½ cup mozzarella cheese (shredded)

Method of Preparation

  1. Cook the vegetables and chicken

    • Melt 1 tablespoon of butter in a pot.

    • Add the chopped onion and sauté until soft.

    • Add the mushrooms, carrot, and broccoli, stirring until tender.

    • Add the chicken cubes and cook until done.

  2. Prepare the béchamel sauce

    • In another pot, melt the remaining 1 tablespoon of butter.

    • Add the flour and stir until lightly golden.

    • Pour in the milk gradually while stirring.

    • Season with salt and black pepper.

    • Keep stirring until the sauce thickens.

  3. Assemble the dish

    • In a baking dish (Pyrex), spread a layer of pasta.

    • Add a layer of chicken and vegetable mixture.

    • Pour a layer of béchamel sauce on top.

    • Repeat the layers until you finish the ingredients, ending with a top layer of béchamel.

  4. Bake

    • Sprinkle mozzarella cheese over the top layer.

    • Bake in the oven for about 15 minutes, until golden and bubbly.
