Spicy Potato Stew (Idam Batata)

One of the tastiest and easiest traditional dishes found in many Arab and international cuisines, Spicy Potato Stew is a complete meal on its own. It can be served as a main dish with white rice or bread. This recipe from Nadormagazine is simple, quick, and made with ingredients you likely already have at home.

Ingredients

  • 4 medium potatoes, peeled and cut into cubes

  • 1 large onion, finely chopped

  • 2 garlic cloves, minced

  • 1 tbsp fresh ginger, grated

  • 2 large tomatoes, chopped

  • 1 tbsp tomato paste

  • 1 cup water

  • 2 tbsp vegetable oil

  • ½ tsp ground cumin

  • ½ tsp turmeric

  • ½ tsp ground coriander

  • ¼ tsp chili powder

  • Salt, to taste

  • Black pepper, to taste

  • Fresh coriander, chopped (for garnish)

Method

  1. In a pot over medium heat, warm the oil. Add the chopped onion and sauté until softened and golden.

  2. Add the garlic and ginger, stirring for about 1 minute until fragrant.

  3. Mix in the turmeric, cumin, coriander, and chili powder. Cook the spices with the onion mixture for 30 seconds to release their aroma.

  4. Add the chopped tomatoes and tomato paste, stirring well to combine.

  5. Add the potato cubes and water. Season with salt and black pepper, mix, then cover the pot.

  6. Let the stew simmer gently for 20–25 minutes, or until the potatoes are tender and the sauce has thickened.

  7. Garnish with fresh coriander and serve hot with white rice or bread.
