4 medium potatoes, peeled and cut into cubes

1 large onion, finely chopped

2 garlic cloves, minced

1 tbsp fresh ginger, grated

2 large tomatoes, chopped

1 tbsp tomato paste

1 cup water

2 tbsp vegetable oil

½ tsp ground cumin

½ tsp turmeric

½ tsp ground coriander

¼ tsp chili powder

Salt, to taste

Fresh coriander, chopped (for garnish)
Method

In a pot over medium heat, warm the oil. Add the chopped onion and sauté until softened and golden.

Add the garlic and ginger, stirring for about 1 minute until fragrant.

Mix in the turmeric, cumin, coriander, and chili powder. Cook the spices with the onion mixture for 30 seconds to release their aroma.

Add the chopped tomatoes and tomato paste, stirring well to combine.

Add the potato cubes and water. Season with salt and black pepper, mix, then cover the pot.

Let the stew simmer gently for 20–25 minutes, or until the potatoes are tender and the sauce has thickened.
