Beef Bone Soup

Ingredients

  • 2 kg beef leg bones

  • 4 liters water

  • 2 tbsp apple cider vinegar

  • 1 medium onion, quartered

  • 2 carrots, chopped

  • 2 celery stalks, chopped

  • 3 garlic cloves, peeled

  • Salt, to taste

  • Black pepper, to taste

  • 1 tsp rosemary

Method

  1. Preheat the oven to 200°C (390°F).

  2. Place the bones on a baking tray and roast for 20–30 minutes until browned. This step enhances the soup’s color and deepens its flavor.

  3. Transfer the roasted bones to a large pot. Add the water and apple cider vinegar.

  4. Bring to a boil, then reduce to the lowest possible heat.

  5. Once simmering, add the onion, carrots, celery, garlic, and rosemary.

  6. Partially cover the pot and let it cook gently for at least 4 hours. The longer it simmers, the richer the flavor and nutrients extracted from the bones.

  7. When finished, remove from heat.

  8. Strain the broth through a fine sieve to remove bones, vegetables, and impurities.

  9. Season with salt and black pepper to taste.

  10. Serve hot, or store in the refrigerator for up to 5 days. For longer storage, freeze in freezer-safe bags for several weeks.
