2 kg beef leg bones

4 liters water

2 tbsp apple cider vinegar

1 medium onion, quartered

2 carrots, chopped

2 celery stalks, chopped

1 tsp rosemary
Method

Preheat the oven to 200°C (390°F).

Place the bones on a baking tray and roast for 20–30 minutes until browned. This step enhances the soup’s color and deepens its flavor.

Transfer the roasted bones to a large pot. Add the water and apple cider vinegar.

Bring to a boil, then reduce to the lowest possible heat.

Once simmering, add the onion, carrots, celery, garlic, and rosemary.
