Banana Cinnamon Muffins

Serves: 5 people

Ingredients:

  • For topping:

    • Sugar: 1/4 cup

    • Ground cinnamon: 1 teaspoon

    • Butter: 1/4 cup (melted)

  • Sugar: 2/3 cup

  • Vegetable oil: 1/2 cup

  • Eggs: 2

  • Bananas: 2/3 cup (peeled and mashed)

  • Vanilla: 1 teaspoon

  • Flour: 1 1/3 cups

  • Baking powder: 1 teaspoon

  • Ground cinnamon: 1 tablespoon

  • Cooking spray: a light spray

Instructions:

  1. Preheat the oven to 180°C (356°F).

  2. Lightly spray a muffin tin with cooking spray.

  3. In a large bowl, whisk together the eggs, sugar, and vegetable oil until smooth.

  4. Add the mashed bananas and vanilla, and mix well.

  5. Add the flour, baking powder, and cinnamon, mixing until fully combined.

  6. Divide the batter evenly into the prepared muffin tin.

  7. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted in the center comes out clean.

  8. Remove the muffins from the oven and place them on a cooling rack.

  9. For the topping: In a small bowl, mix the melted butter, sugar, and cinnamon until well combined.

  10. Dip the muffins into the topping mixture and place them on a serving plate.

  11. Serve warm and enjoy!
