Oven-Roasted Mutton Shanks Recipe

Ingredients

  • Mutton shanks: 1 kg (with bone)

  • Olive oil: 2 tablespoons

  • Salt: 1 teaspoon

  • Black pepper: ½ teaspoon

  • Smoked paprika: 1 teaspoon

  • Cumin: ½ teaspoon (ground)

  • Coriander: ½ teaspoon (ground)

  • Crushed chili: ¼ teaspoon

  • Carrots: 2 medium (cut into large chunks)

  • Celery: 2 stalks (cut into large chunks)

  • Onion: 1 large (quartered)

  • Garlic: 4 cloves

  • Rosemary: 4 sprigs (fresh)

  • Thyme: 4 sprigs (fresh)

  • Beef stock: 2 cups

  • Tomato paste: 1 tablespoon

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. Pat the mutton shanks dry with kitchen paper towels.

  3. In a small bowl, mix the salt, black pepper, smoked paprika, cumin, coriander, and crushed chili.

  4. Rub the olive oil over the mutton shanks, then season them with the spice mix, ensuring all sides are well-coated. Gently massage the spices into the meat.

  5. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Brown the mutton shanks on all sides until they’re golden brown and crispy.

  6. Remove the mutton shanks from the skillet and set them aside.

  7. In the same skillet, add the carrots, celery, onion, and garlic. Sauté for 5-7 minutes until the vegetables soften and release their aroma.

  8. Add the tomato paste and stir for another minute.

  9. Pour in the beef stock and add the rosemary and thyme sprigs.

  10. Return the mutton shanks to the skillet, making sure the liquid covers about two-thirds of the meat.

  11. Transfer the contents to a deep roasting pan, cover with aluminum foil tightly.

  12. Place the pan in the preheated oven and roast for 2.5 to 3 hours, or until the meat is very tender and easily comes off the bone with a fork.

  13. Once ready, remove from the oven and let the meat rest for 10-15 minutes before serving.

  14. Serve the oven-roasted mutton shanks with the cooked vegetables, white rice, or mashed potatoes for a complete meal.
