Instructions

Preheat the oven to 180°C (350°F).

Pat the mutton shanks dry with kitchen paper towels.

In a small bowl, mix the salt, black pepper, smoked paprika, cumin, coriander, and crushed chili.

Rub the olive oil over the mutton shanks, then season them with the spice mix, ensuring all sides are well-coated. Gently massage the spices into the meat.

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Brown the mutton shanks on all sides until they’re golden brown and crispy.

Remove the mutton shanks from the skillet and set them aside.

In the same skillet, add the carrots, celery, onion, and garlic. Sauté for 5-7 minutes until the vegetables soften and release their aroma.
