Chicken with Mango Sauce

Cooking Time: 60 minutes
Serves: 4 people

Ingredients:

  • 2 tablespoons vegetable oil

  • 1 red bell pepper, diced

  • 400 grams chicken breast, cubed

  • 2 mangoes, peeled and sliced

  • 3 tablespoons curry powder

  • 1¼ cups coconut milk

Instructions:

  1. Place the mango slices and coconut milk in a blender and blend until smooth to create a creamy mango sauce. Set aside.

  2. Heat the vegetable oil in a pot over medium heat, then add the curry powder and stir for 1 minute.

  3. Add the chicken cubes and red bell pepper, stirring for about 5 minutes until the chicken is cooked and the pepper is tender.

  4. Pour the mango sauce over the chicken mixture and stir for about 5 minutes until heated through.

  5. Serve the chicken with mango sauce hot, alongside cooked rice.
