400 grams chicken breast, cubed

2 mangoes, peeled and sliced

1¼ cups coconut milk
Instructions:

Place the mango slices and coconut milk in a blender and blend until smooth to create a creamy mango sauce. Set aside.

Heat the vegetable oil in a pot over medium heat, then add the curry powder and stir for 1 minute.

Add the chicken cubes and red bell pepper, stirring for about 5 minutes until the chicken is cooked and the pepper is tender.
