For the Dough:

Prepare the Dough:In a large mixing bowl, combine the flour and salt. Add the melted butter and rub it into the flour with your fingertips until the mixture becomes crumbly.

Knead the Dough:Gradually add warm water while mixing and kneading until you form a smooth, elastic dough. Continue kneading for about 5–7 minutes. Cover the dough and let it rest for at least 30 minutes at room temperature.

Make the Filling:In a separate bowl, mix the shredded cheese, chopped parsley, and nigella seeds.

Roll and Shape:Lightly flour a clean surface. Roll out the dough very thin using a rolling pin—the thinner the dough, the crispier the sambousek!

Cut and Fill:Use a small round cutter to cut the dough into circles. Place 1 tsp of filling in the center of each circle, fold into a half-moon shape, and press the edges firmly to seal.

Freeze Briefly:Arrange the sambousek pieces on a tray and place them in the freezer for a short time—this helps keep their shape when frying.

Fry the Sambousek:Heat oil in a deep pan over medium-high heat. Fry the sambousek in batches—don’t overcrowd the pan—until golden brown and crispy on all sides.
