Mini Cheese Sambousek

Mini cheese sambousek is a perfect addition to any meal—whether as a light snack or as part of a festive spread. With its crispy exterior, soft interior, and rich cheese filling, it’s bound to be a crowd favorite. Easy and fun to prepare, this recipe is worth every minute!

🧂 Ingredients

For the Dough:

  • 3 cups all-purpose white flour

  • ½ cup melted butter

  • ½ tsp salt

  • 1 cup warm water

For the Filling:

  • 2 cups shredded white cheese (any melting cheese like feta, mozzarella, or akkawi)

  • ¼ cup finely chopped parsley

  • 1 tsp nigella seeds (optional but adds great flavor)

For Frying:

  • Vegetable oil, as needed

  1. Prepare the Dough:
    In a large mixing bowl, combine the flour and salt. Add the melted butter and rub it into the flour with your fingertips until the mixture becomes crumbly.

  2. Knead the Dough:
    Gradually add warm water while mixing and kneading until you form a smooth, elastic dough. Continue kneading for about 5–7 minutes. Cover the dough and let it rest for at least 30 minutes at room temperature.

  3. Make the Filling:
    In a separate bowl, mix the shredded cheese, chopped parsley, and nigella seeds.

  4. Roll and Shape:
    Lightly flour a clean surface. Roll out the dough very thin using a rolling pin—the thinner the dough, the crispier the sambousek!

  5. Cut and Fill:
    Use a small round cutter to cut the dough into circles. Place 1 tsp of filling in the center of each circle, fold into a half-moon shape, and press the edges firmly to seal.

  6. Freeze Briefly:
    Arrange the sambousek pieces on a tray and place them in the freezer for a short time—this helps keep their shape when frying.

  7. Fry the Sambousek:
    Heat oil in a deep pan over medium-high heat. Fry the sambousek in batches—don’t overcrowd the pan—until golden brown and crispy on all sides.

  8. Drain and Serve:
    Remove from oil and place on paper towels to absorb excess oil. Serve hot, optionally with yogurt dip or spicy tomato sauce.
