Lebanese-Style Lentil Soup (Diet-Friendly)

๐Ÿ“‹ Ingredients:

  • 1 cup red lentils (washed)

  • 1 chicken bouillon cube (optional)

  • 1 liter water

  • 1 tomato, chopped

  • 1 onion, chopped

  • 1 small potato, diced

  • 1/2 cup chopped leeks

  • 2 tablespoons olive oil

  • 1/2 teaspoon cumin

  • A pinch of paprika

  • Salt and black pepper to taste

๐Ÿฒ Instructions:

  1. In a large pot over medium heat, warm the olive oil and sautรฉ the onion for about 3 minutes until soft.

  2. Add the garlic, leeks, potatoes, and tomato. Stir well for 2 minutes.

  3. Season with cumin, paprika, salt, and black pepper. Mix to combine.

  4. Add the red lentils and bouillon cube, then pour in the water and stir.

  5. Bring to a boil, then reduce the heat, cover the pot, and simmer for 45 minutes until the vegetables and lentils are tender.

  6. Let the mixture cool slightly, then blend it in a blender until smooth.

  7. (Optional) Strain the soup for a silky texture, return it to the pot, and heat gently until it reaches your desired consistency.
