Zucchini Boats Stuffed with Cheese and Herbs: An Easy and Light Delicious Dish

Ingredients:

  • Zucchini: 500 grams

  • Feta cheese: 1 cup

  • Cooking cream: ½ cup

  • Olives: ¼ cup (pitted and chopped)

  • Carrot: ½ cup (grated)

  • Salt: a pinch

  • Black pepper: a pinch

  • Ghee (or butter): 1 tablespoon

  • Herbs: ¼ teaspoon

  • Romi cheese (for garnish): as desired (grated)

  • Cooking cream (for garnish): as desired

Instructions:

  1. Wash the zucchini, hollow out the centers, and cut them in halves. Season with salt and black pepper.

  2. Heat the ghee in a pan over medium heat, add the zucchini, and sauté until browned on all sides.

  3. In a bowl, mix feta cheese, cooking cream, olives, grated carrot, and herbs until well combined.

  4. Stuff the zucchini halves with the cheese mixture and place them in a baking dish.

  5. Pour cooking cream over the zucchini and sprinkle grated Romi cheese on top.

  6. Preheat the oven to 180°C (356°F).

  7. Bake the zucchini boats until the top is golden brown. Serve hot.
