Creamy Avocado and Spinach Pasta

Ingredients:

  • 1 avocado (peeled and pitted)

  • 1 cup fresh spinach

  • 1 pack pasta (any kind you like)

  • 1 garlic clove

  • ½ cup walnuts

  • ¼ cup fresh basil

  • ¼ cup grated Parmesan cheese

  • 1 tablespoon fresh lemon juice

  • 1 cup pasta cooking water

  • ½ teaspoon salt

  • ½ teaspoon black pepper

Preparation:

  1. Cook the pasta in salted boiling water according to package instructions. Drain the pasta but save 1 cup of the cooking water.

  2. To prepare the sauce, combine garlic, avocado, spinach, basil, walnuts, Parmesan, lemon juice, salt, and pepper in a blender.

  3. Blend at medium speed until smooth and creamy. Gradually add the reserved pasta water while blending until the sauce reaches a creamy consistency.

  4. Place the cooked pasta in a serving dish, pour the avocado-spinach sauce over it, and gently toss to combine.

  5. Serve immediately.
