Healthy Dried Apricot Energy Bars

Ingredients:

  • Dried apricots: 250 grams

  • Oats: 250 grams

  • Maple syrup: 5 tablespoons

  • Chocolate (dark, melted): 70 grams

  • Pumpkin seeds: 70 grams

  • Coconut oil: 100 grams

  • Ground ginger: 2 tablespoons

  • Hazelnuts (coarsely chopped): 70 grams

  • Pistachios (coarsely chopped): 70 grams

Preparation:

  1. Soak the dried apricots in hot water for about 5 minutes. Drain and place them in a blender.

  2. Add maple syrup and coconut oil, and blend at medium speed until well combined.

  3. Add oats and ground ginger, then blend again until fully mixed.

  4. Transfer the apricot mixture to a deep bowl. Add pistachios, hazelnuts, and pumpkin seeds. Mix well until all ingredients are combined.

  5. Line a rectangular baking pan with parchment paper.

  6. Pour the dried apricot mixture into the pan and level the surface.

  7. Scatter some apricot pieces on top and gently press them down into the mixture.

  8. Refrigerate the pan for about 3 hours until firm.

  9. Cut into equal-sized bars.

  10. Dip the edges of the bars into the melted chocolate and place them on parchment paper to set.

  11. Serve the healthy dried apricot energy bars immediately.
