Broccoli Salad for Weight Loss

  • Broccoli: 3 ½ cups (cut into florets)

  • Red bell pepper: 1 (chopped)

  • Light butter: 1 tablespoon

  • Onion: 2 tablespoons (finely chopped)

  • Garlic: 1 clove (minced)

  • Cornstarch: 1 ½ tablespoons

  • Mustard: 2 teaspoons

  • Orange juice: ⅓ cup

👩‍🍳 Preparation:

  1. Boil the vegetables:
    In a pot of boiling water, cook the broccoli and red bell pepper until fully tender.

  2. Keep warm:
    Remove the pot from the heat and cover it to retain warmth.

  3. Make the sauce:
    In a non-stick pan over medium heat, melt the butter. Add the onion and garlic, and sauté until softened.

  4. Thicken the sauce:
    Add cornstarch, mustard, and orange juice to the pan. Stir well until the sauce thickens.

  5. Assemble the salad:
    Drain the boiled broccoli and red bell pepper. Place them in a serving dish, pour the prepared sauce over, gently toss, and serve immediately.
