Blueberry Yogurt Muffins

🧾 Ingredients:

  • Blueberries: 1½ cups

  • Eggs: 2 large

  • Yogurt: 1¼ cups

  • Flour: 2 cups

  • Sugar: 1 cup

  • Baking powder: 1 tablespoon

  • Salt: ½ teaspoon

  • Butter: 4 tablespoons (melted, unsalted)

  1. Preheat oven to 180°C (350°F).

  2. Line a muffin tin with paper liners.

  3. In a mixing bowl, combine flour, salt, and baking powder, and stir until well blended.

  4. In another bowl, beat the eggs using an electric mixer until thick and pale in color.

  5. Add the sugar and continue beating until dissolved. Gradually add the melted butter, mixing continuously.

  6. Add the yogurt in two parts, mixing lightly each time until fully incorporated.

  7. Add the blueberries to the flour mixture and gently fold them in. Then add the egg-yogurt mixture and stir lightly with a spatula until just combined and the berries are evenly distributed.

  8. Divide the batter evenly into the muffin liners.

  9. Bake for 25–30 minutes, or until the tops are golden and a toothpick comes out clean.

  10. Let the muffins cool in the tin, then serve.
