Vegetable Muttabaq with Eggs for Breakfast

Muttabaq is one of the most popular pastries in Gulf cuisine. It's a type of stuffed pastry that can be baked or fried at home using simple steps and ingredients available in your kitchen. Ingredients:

For the Filling:

  • 4 eggs

  • 1 tomato (finely chopped)

  • 1 cup leeks (finely chopped)

  • ½ teaspoon black pepper

  • ½ teaspoon ground cumin

  • 1 teaspoon salt

  • Red chili pepper (to taste)

For the Dough:

  • 350 grams Muttabaq dough (store-bought or homemade)

Other:

  • Vegetable oil (as needed)

Instructions:

  1. In a bowl, combine the eggs, tomato, leeks, black pepper, cumin, salt, and red chili pepper. Mix well until the ingredients are blended.

  2. Lightly oil your work surface and place a sheet of Muttabaq dough on it.

  3. Add a spoonful of filling to the center of the dough. Fold the edges over the filling to form a square parcel. Repeat the process with the remaining dough and filling.

  4. Lightly oil a skillet and place it over medium heat.

  5. Cook each Muttabaq parcel for about 4 minutes on each side, or until golden brown and crispy.

  6. Serve hot.
