For the Filling:

4 eggs

1 tomato (finely chopped)

1 cup leeks (finely chopped)

½ teaspoon black pepper

½ teaspoon ground cumin

Red chili pepper (to taste)
For the Dough:

350 grams Muttabaq dough (store-bought or homemade)
Other:

Vegetable oil (as needed)
Instructions:

In a bowl, combine the eggs, tomato, leeks, black pepper, cumin, salt, and red chili pepper. Mix well until the ingredients are blended.

Lightly oil your work surface and place a sheet of Muttabaq dough on it.

Add a spoonful of filling to the center of the dough. Fold the edges over the filling to form a square parcel. Repeat the process with the remaining dough and filling.

Lightly oil a skillet and place it over medium heat.

Cook each Muttabaq parcel for about 4 minutes on each side, or until golden brown and crispy.
