Mini Chicken Quesadillas

Ingredients:

  • 1½ cups cooked chicken, finely shredded

  • 1½ cups shredded Mexican cheese blend

  • ⅓ cup store-bought Mexican salsa

  • ¼ cup fresh cilantro, chopped

  • A pinch of salt

  • A pinch of black pepper

  • 1 cup cooked beans (any variety you like)

  • Small flour tortillas (as needed)

  • 3 tablespoons vegetable oil

Instructions:

  1. Preheat the oven to 180°C (350°F).

  2. In a medium bowl, mix the shredded chicken, cheese, salsa, and chopped cilantro. Season with salt and black pepper. Stir until well combined.

  3. Lay out the tortillas. Spread some cooked beans over each one, then spoon the chicken mixture on top. Fold each tortilla in half to seal it like a half-moon.

  4. Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Place the quesadillas in the pan in a single layer and cook until golden brown on each side.

  5. Transfer the quesadillas to a baking sheet and bake in the oven for about 15 minutes, until heated through and the cheese is fully melted.

  6. Serve warm.
