Creamy Scrambled Eggs with Spinach

Scrambled eggs with spinach and cream cheese is a healthy and delicious dish perfect for breakfast or dinner. It’s easy to make with simple ingredients you likely already have in your kitchen.

Ingredients:

  • 340 grams (about 12 oz) fresh spinach leaves, chopped

  • 2 tablespoons olive oil

  • ½ cup onion, chopped

  • 1 garlic clove, minced

  • ¼ cup cooking cream

  • 8 eggs

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • ½ teaspoon dried thyme

  • ¼ cup cream cheese

Instructions:

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and garlic, and sauté for about 5 minutes until softened.

  2. Add the chopped spinach and cook for 7 minutes, stirring occasionally, until the spinach is wilted and tender.

  3. In a separate bowl, whisk the eggs with the cream, salt, pepper, and thyme.

  4. Pour the egg mixture into the skillet over the spinach, and cook for 5 minutes, stirring occasionally until the eggs are just set.

  5. Add the cream cheese and stir gently until it melts and blends into the eggs.

  6. Serve hot, and enjoy!
